Welcome the rain Gods with a platter of Bhajia (Assorted veg fritters)

Enjoy this crispy savory treat with your friends and family over the weekend, or just much it along with some hot tea while enjoying the rains sitting in your balcony.

After bearing the scorching heat of northern India and faring the sun and heat stroke at the same time, today’s rain spell came as the most awaited relief. So, I welcomed the first rain of the season with a Bhajia, and Chai treat to myself! Bhajia is an Indian savoury fritter commonly made in every Indian kitchen as a teatime snack or a side dish. It is made with a mix of vegetables like potato, onions and cauliflower in general. It is a very simple dish yet so delicious that little is never enough. Also, it can be made with basic ingredients available in the pantry. Here is the recipe that I follow to get those crispy golden savoury treats every time I make it.

Mix Vej Bhajia

Prep time: 15 min
Cook time: 15 mins
Level: Easy
Ingredients:
1 big potato, peeled and chopped
1 big onion, thinly sliced
1cup Cauliflower florets
2 green chillies, finely chopped
1 tsp coriander seeds (sabut dhania), coarsely crushed
1 tsp red chilli pwd
1 tsp amchur pwd
½ tsp garam masala
½ cup besan
1 tbsp semolina/ rice flour
1-2 tbsp water
Mustard oil for deep frying
Method:

  1. Mix all the ingredients in a large bowl, except water, the moisture cintent of the chopped vegetables should be enough to bind the ingredients together.
  2. If you find the mixture too dry then add 1-2 tbsp water ( only one tbsp at a time ), and check the consistency. It shouldn’t be runny otherwise it won’t coat the vegetables.
  3. Heat mustard oil in a large wok or kadhaai.
  4. Let the oil reach its smoke point and then reduce the flame.
  5. To check when its hot enough to fry, put little batter in the oil. It should fizzle and float to the top. Now turn the flame to medium.
  6. Drop a few tablespoons of the batter into the hot oil. Cook until golden brown.
  7. You might need to flip them over to make sure that the bhajias are evenly cooked.
  8. Take the fritters out on a paper towel to drain out excess oil.
  9. Sprinkle some chaat masala over the Bhajias and serve hot with mint chutney and Chai.
